How to cook Thanksgiving dinner with one oven
With one oven, the limit is temperature. The oven holds one temperature at a time, and the turkey takes it for three hours or more for most whole birds. The plan that works uses the order of the day: pies in the morning, then the turkey, then all the sides together while the turkey rests.
The strategy
- Bake the pies first. They need to cool anyway, so they can come out hours before dinner, or the day before.
- Roast the turkey. USDA gives 3 to 3¾ hours at 325 °F for an unstuffed 12–14 lb bird (see the turkey roasting time chart). Plan for the long end and check early with a food thermometer: USDA says 165 °F.
- Take the turkey out early and let it rest covered. USDA suggests letting it stand 20 minutes before carving. In this plan it rests longer, because that is when the sides bake.
- Bake the sides at one temperature. Many casserole recipes call for 350 °F or 375 °F. Picking one for all of them saves a temperature change. I assume 15 minutes for each one.
- Rolls go in last. The example below uses 20 minutes for them. Rolls vary, so check the package. They are best warm, so they share the end of the sides window.
- Use the stovetop for the rest. Mashed potatoes and gravy do not need the oven, and gravy is made from the turkey drippings once the bird is out.
A worked schedule for a 5 PM dinner

The turkey comes out at 1 h before dinner. The first 15 minutes of that bring the oven up to 350 °F, and the sides bake in the rest. The pie went in first thing, so the oven changes temperature only twice all day.
Why a 30-minute rest is too short here
Say the turkey has to be carved 30 minutes after it comes out. In those 30 minutes the oven has to climb from 325 °F to 350 °F and the stuffing has to bake for 45 minutes. That doesn't fit, and the planner says so:
There are three ways out: let the turkey rest longer under foil (the plan above), bake some sides before the turkey and reheat them, or use a second oven. A countertop oven counts.
The same menu with two ovens
With a second oven the sides bake while the turkey is still roasting. The turkey can come out 30 min before dinner and the first step moves to 12:30 PM, against 10:50 AM with one oven.
