How to keep a turkey warm before serving

The turkey is done, and dinner is an hour away. Illinois Extension says it is safe to hold a finished turkey in the oven at a reduced temperature of 200 °F. Keep a thermometer in the bird, make sure the reading never drops below 140 °F during the hold, and keep the turkey covered so it does not dry out. The catch is the oven: while it sits at 200 °F, the sides that bake at 350 °F have nowhere to go. The tables below show what that costs, with clock times for a 5 PM dinner and a 12–14 lb turkey.

What is published

  • Hold temperature: 200 °F oven, turkey covered, thermometer left in the bird, reading at 140 °F or higher the whole time. That is from Illinois Extension's page Holding Time. The page gives no maximum hold time, so I have none either. Watch the thermometer instead of the clock.
  • Rest first: the same site says to allow the turkey to rest 20 minutes after cooking. The plan below counts only the 15 minutes it takes to bring the oven down to 200 °F, with the turkey covered on the counter. To follow the page, let it rest the full 20 minutes, check that the thermometer still reads 140 °F or higher, then put it back in at 200 °F.
  • Leftovers: refrigerate within 2 hours after cooking is completed, in several shallow containers. That is about leftovers, not about the hold, so I do not stretch it into a hold limit.
  • Roast time: 3 to 3¾ hours at 325 °F for an unstuffed 12–14 lb bird (USDA, see the turkey roasting time chart). The plan uses 225 minutes, the long end.
  • Not found: a published number for how long a covered turkey stays at or above 140 °F outside the oven. I did not find one, so I do not give one. Your thermometer is the only answer.

What the hold does to the sides

Menu: the turkey, then three sides at 350 °F (stuffing in a dish, sweet potato casserole, dinner rolls), dinner at 5 PM. The turkey comes out, the oven drops to 200 °F, the turkey goes back in for the hold and stays until it is carved. The planner treats the hold as a dish of its own, so the sides are placed around it.

"Too early" means the dish would have to come out more than it can wait (20 minutes for the casseroles, 10 for the rolls) before dinner. Those waits are the planner's own assumptions (no source gives them), and so is the 200 °F hold lasting until the turkey is carved. Under them, every hold on this list pushes all three sides to the hours before the turkey even goes in, because the one oven is at 325 °F, then 200 °F, with no 350 °F window left. If you bake the sides earlier and reheat them, they fit. For this menu, a second oven fixes it.

The second oven takes the sides, so the 200 °F hold never gets in their way. Open this menu in the planner to change the hold, the dinner time or the dishes.

With only one oven

  • Bake the 350 °F sides before the turkey goes in, or in the morning, and reheat them before dinner on the stovetop, in the microwave, or in the oven once the turkey is out for carving. The one-oven guide has more ways to share one oven.
  • Rest the turkey covered for 20 minutes. If the thermometer still reads 140 °F or higher and dinner is ready, carve. Otherwise it goes back in at 200 °F until you carve.
  • If dinner slips and the turkey is already out, putting it back at 200 °F is the published option, and the sides then wait for it. Sides that reheat fine (mashed potatoes, gravy) can move to the stovetop or the microwave.
  • A turkey that is done very early is a timing mistake worth fixing next year. The timeline by dinner time lists when the bird goes in for dinners between 1 and 6 PM.
