Thanksgiving 2026 make-ahead timeline: which days need the oven
Thanksgiving is Thursday, November 26, 2026. This calendar starts on Thursday, November 12 and puts each make-ahead dish on a day, with how to store it, how to reheat it, and whether that day needs the oven. Only 4 of the 15 days do: Sat Nov 14, Tue Nov 24, Wed Nov 25, Thu Nov 26. On the others the oven is free, which helps when the fridge and the stove are the busy places.
The calendar
Dates come from America's Test Kitchen's make-ahead timeline, which groups dishes into dated phases, and King Arthur's Thanksgiving timeline, which gives phases without dates. I opened both in October 2026. Text in quotation marks is copied from them. Where a source only names a phase, such as "Nov 21 to 23", the exact day inside it is my choice. Storage notes are the sources' words, and I add no times of my own. For anything not quoted, follow the package or the recipe.

The four oven days
Saturday, November 14 is for parbaking rolls, which King Arthur says keep "up to six weeks ahead" in the freezer. Tuesday, November 24 is for the sweet potato casserole. Wednesday, November 25 is for the pumpkin pie, and it also holds the longest list of fridge work: stuffing assembled, potatoes peeled, turkey salted. I put the pie on Wednesday because that is when America's Test Kitchen lists it, and it also gets the pie out of Thursday's oven. If you would rather bake it on Tuesday, nothing else in the calendar changes. Your own menu may differ, so the planner takes any dish list.
Thursday, November 26: one oven, 5 PM dinner
Thursday uses the same scheduler as the rest of this site. It assumes a 12 to 14 lb turkey with a one hour rest, up to 4 dishes in the oven at once, and the make-ahead sides from the calendar reheating while the turkey rests. Each oven change takes 15 minutes.

What the two sources leave open
America's Test Kitchen gives dates but no clock times, and King Arthur gives phases but no oven plan. Neither says which days you need the oven, or how Thursday's reheats fit around the turkey. The calendar and the Thursday plan below fill that gap. If you want hour-by-hour times for another dinner hour, use the timeline by dinner time. If you only have one oven and a long menu, Thanksgiving dinner with one oven walks through the whole day.
- Fridge space is the second limit. Thawing turkey, a casserole, a pie and a stuffing dish are all in there by Wednesday night, so clear shelves on Sunday.
- A frozen turkey needs about one fridge day per 4 pounds. When to thaw a turkey for Thanksgiving gives the start date for your weight.
- Pies and rolls can move earlier or later. The turkey and the Thursday reheats cannot, since they set the oven schedule.
- I made these placements from the two sources and have not tested every dish. Keep the food safe: follow your recipe and the package for storage and reheating.
