20 lb turkey Thanksgiving timeline
For a 5:00 PM dinner with one oven, a 20 lb unstuffed turkey goes into a 325 °F oven at 11:30 AM and comes out at 4:00 PM. While it rests under foil, the oven goes up to 350 °F and the sides bake: stuffing in at 4:15 PM, rolls at 4:45 PM. Eating at 6:00 PM? Shift everything an hour: turkey in at 12:30 PM, out at 5:00 PM.

Start checking the thigh temperature at 3:45 PM. The oven is at 325 °F from 11:15 AM to 4:00 PM, 4 h 45 min for the turkey alone.
How long a 20 lb turkey takes
Twenty pounds sits right on the line between two rows of the 325 °F timetable. University of Illinois Extension gives 4¼ to 4½ hours for 18 to 20 lb and 4½ to 5 hours for 20 to 24 lb, and puts a 20 pound bird at 4¼ to 5 hours, with the first thermometer check after 4¼. This timeline plans for 4 h 30 min, the long end of the lighter row, which is the same number the planner uses. The turkey is done when the innermost part of the thigh reads 165 °F; check the wing and the thickest part of the breast too.
If the thermometer is still short of 165 °F at 4:00 PM, keep roasting. The heavier row allows up to 30 more minutes, and every minute comes out of the sides' window. Want that cushion built in? Put the bird in at 11:00 AM instead. If it finishes early, it rests longer under foil; keeping a turkey warm covers the wait.

This is the planner's checklist for the one-oven menu with the turkey set to 20 lb: three dishes in the oven at once and 15 minutes for each temperature change.

Other dinner times, from 1 to 6 PM and for every weight, are on what time to put the turkey in the oven.
Where the sides fit
- The rest window. The bird comes out 1 h before dinner. Illinois Extension asks for 20 to 30 minutes of standing time before carving. Here it stays covered with foil for the whole hour, and the oven works on the sides. The first 15 minutes bring the oven up to 350 °F, which leaves 45 min of baking.
- 350 or 375 °F. Pick one temperature for every casserole. If your recipes say 375 °F, set that instead and use their times; the planner counts the same 15 minutes for the step up.
- Stuffing in the last hour. Illinois Extension suggests baking the stuffing in a casserole during the last hour or so of the roast. My suggestion: that works at 325 °F only if the oven has a free rack next to a 20 lb bird and its pan. If not, it goes in first after the turkey comes out, as in the checklist.
- Rolls last. They need the least time and are best warm, so they go in at 4:45 PM.
- The stovetop. Mashed potatoes and gravy never need the oven. The gravy starts once the drippings are free, after 4:00 PM.
What not to try to fit
- A pie at its own temperature during the roast. From 11:15 AM to 4:00 PM the oven belongs to the turkey at 325 °F. The pie goes in at 10:20 AM, or bakes the day before. Pies and turkey in one oven has times for 400 °F pumpkin and 375 °F pecan.
- A side that bakes longer than 45 min. Set the stuffing to 60 minutes and the planner pulls the turkey out earlier than it can wait: Warning: Turkey, 20 lb has to come out 1 h 15 min before serving, and it can wait 1 h. The oven is busy with Stuffing (in a dish) at 350 °F then. Bake that dish in the morning and reheat it, or see what to bake while the turkey rests.
- A ham in the same oven. A 20 lb turkey in its roasting pan leaves little room on the racks. Turkey and ham in the same oven works out when that can share.
- Stuffing inside the bird. The stuffed table gives 4¼ to 4¾ hours for 18 to 20 lb, so the bird goes in at 11:15 AM and every step before it moves up by the same amount. The USDA guidance quoted on the stuffing page says the center of the stuffing has to reach 165 °F as well: see stuffing and turkey at the same time.
Before the day
A frozen 20 lb turkey needs days in the fridge: when to thaw a 20 lb turkey for Thursday, November 26 has the start date. Short on oven hours? A spatchcocked turkey or a roaster oven frees the oven. Roasting hours by weight, the 165 °F thigh reading, the 20 to 30 minute stand and the stuffing casserole in the last hour are from University of Illinois Extension, Traditional Roast Turkey (unstuffed). Its hours match the USDA 325 °F timetable this site uses on the turkey roasting time chart. The side dish times are example recipe times; use your own in the planner.
