Christmas prime rib dinner timeline: roast and sides in one oven

A prime rib roasts at 325 °F. Roast potatoes, carrots and Yorkshire puddings want 425 °F. With one oven the order is fixed: the roast goes in first, comes out about an hour before dinner and rests under foil, and the sides take the oven after it. The tables below put clock times on that order, for different roast sizes and dinner times.

What the times rest on

  • Roasting time: 17 minutes per pound at 325 °F, the top of the 15 to 17 minute range for medium-rare in Safeway, how to roast perfect beef. The same guide says to start checking the temperature 30 minutes before the calculated time, which the "start checking" column shows.
  • Pull temperatures from that guide: 125–130 °F for medium-rare (it finishes around 135 °F while resting), 135–140 °F for medium (finishes at 145 °F). Measure in the thickest part, away from the bone.
  • Rest: the guide says at least 30 minutes for a prime rib over 5 lb, loosely tented with foil. The plan rests the roast 30 to 60 minutes, because the hour while the oven runs the sides is the time it has. That upper limit is my assumption.
  • USDA lists 145 °F as the safe minimum for beef roasts. I could not open the FSIS page to check the exact wording (the site blocks my fetches), so see the FSIS safe temperature chart and choose your own target.
  • Everything else is example recipe time: potatoes 45 minutes, carrots and parsnips 35, Yorkshire puddings 25, Brussels sprouts 15 on the stovetop, all at 425 °F except the sprouts. The oven needs 15 minutes to change temperature.
  • The same guide also describes a hotter start (475 °F for 20 minutes, then 325 °F). The planner holds one temperature per dish, so the tables use plain 325 °F. If you sear first, the roast needs the oven a little earlier.

When the roast goes in, by weight

For a 6 PM dinner. A bigger roast moves "roast in" earlier and nothing else: it comes out at 5:00 PM and the sides go in at 5:15 PM in every row.

"Oven on" is the first step, 15 minutes before the roast goes in. Roasting time is a guide: the thermometer decides when the roast comes out. If it is done early, it rests longer under foil.

When to start, by dinner time

For a 7 lb roast (1 h 59 min). Moving dinner moves every step by the same amount.

The sides window is the hour after the roast comes out. Potatoes take the longest, so they go in first, then the carrots and parsnips, then the Yorkshire puddings. The sprouts run on the stovetop at the end. Dessert is not in the plan; a pie baked the day before keeps the oven free in the afternoon.

When a 350 °F side joins the menu

Add a green bean casserole (350 °F, 35 minutes, example time) and the planner no longer finds a clean plan. It bakes the casserole right after the roast, which sends the roast out at 4:10 PM, 1 h 50 min before dinner. That is past the 60 minutes the plan allows, so the roast is flagged, and so is the casserole, which has the roast potatoes in its way.

My suggestions, none of them sourced:

  • Pick sides that bake at 425 °F or need no oven. Mashed potatoes, creamed spinach and cranberry sauce can all be made on the stovetop.
  • Move the casserole to a second oven if you have one (the planner has a two-oven setting).
  • Let the roast rest longer than the plan assumes. Raise its "can wait" time in the planner to see what that does to the rest of the schedule.
