How long to rest a turkey before carving

The USDA says to let the turkey stand 20 minutes before carving. Many recipes say 30 to 45. The rest is when the turkey is out and the oven is free, so its length decides which sides can still bake. This page shows that trade, with clock times for a 5 PM dinner and a 12–14 lb turkey.

What is published

  • The USDA's brochure Let's Talk Turkey (I read a university extension copy): "For quality, let the turkey stand for 20 minutes before carving to allow juices to set. The turkey will carve more easily." The brochure gives quality as the reason, so I use 20 minutes as the published figure.
  • Illinois Extension on carving: rest the turkey 20 minutes after cooking, so the juices saturate the bird evenly again for better slicing. The page does not say whether to cover it.
  • The same USDA brochure says to discard turkey, stuffing and gravy left out at room temperature longer than 2 hours (1 hour above 90 °F). The rest counts toward that time, and the clock keeps running through carving and dinner.
  • Not found: a published rest time by turkey weight, or a rule that a longer rest is better. Longer rests are common cooking advice, and I treat them as a choice.

What fits in the oven during the rest

The turkey roasts at 325 °F, the sides bake at 350 °F, and the oven needs about 15 minutes to change between the two. So a side fits in the rest only if its bake time is at most the rest minus 15 minutes. The sides are three examples: stuffing in a dish (45 min), sweet potato casserole (30 min) and dinner rolls (15 min). Your recipes will differ, and the planner takes your own times.

The dishes that do not fit have three options: bake them before the turkey goes in and reheat, bake them in a second oven while the turkey roasts, or lengthen the rest. At 20 minutes only 5 minutes remain after the oven change, which fits none of the three. This table assumes the rest happens on the counter. A 1 h rest, one oven

Dinner at 5 PM. A one-hour rest is the length at which all three sides fit. The turkey comes out at 4:00 PM, the oven changes to 350 °F, and the sides bake side by side so they all finish together.

Ask the planner for the same menu with a 20 minute rest and it still takes the turkey out 1 h before dinner, because the stuffing needs its 45 minutes and the oven change. It flags the turkey as resting longer than you asked. the length of the rest often follows from the longest side, not from the turkey. Open this menu in the planner to change the rest, the dinner time or the dishes.
