When to thaw a turkey for Thanksgiving

A frozen turkey in the fridge needs about one day for every 4 to 5 pounds. This page uses the slow end, 4 pounds a day. Enter the weight and the dinner date, and this page counts back to the day the turkey goes into the fridge. It also shows how long the cold-water method takes, in case the date slips past you.

Weights from 4 to 24 lb, the range the USDA table covers. Anything else resets to 14 lb.

For a 12 lb turkey and dinner on Thursday, November 26, 2026. That is 3 days of thawing. At the fast end of the USDA rate (5 lb a day) the turkey would be thawed if it went in on Mon, Nov 23, so starting on the date above leaves room.

Fallback, cold water: 6 h at 30 minutes per pound, with the water changed every 30 minutes. Cook the turkey right after.

What the USDA says

The numbers come from the USDA Food Safety and Inspection Service brochure Let's Talk Turkey. I couldn't open the USDA site, so I opened a university extension copy in October 2026. Quoted text is copied from it.

  • "There are three ways to thaw your turkey safely", in the refrigerator, in cold water, or in the microwave oven.
  • Refrigerator (40 °F or below): "Allow approximately 24 hours for every 4 to 5 pounds". The brochure's table gives 1 to 3 days for 4 to 12 lb, 3 to 4 days for 12 to 16 lb, 4 to 5 days for 16 to 20 lb and 5 to 6 days for 20 to 24 lb.
  • "Keep the turkey in its original wrapper. Place it on a tray or in a pan to catch any juices that may leak. A thawed turkey can remain in the refrigerator for 1 to 2 days."
  • Cold water: "Allow approximately 30 minutes per pound". The brochure's table gives 2 to 6 hours for 4 to 12 lb, 6 to 8 hours for 12 to 16 lb, 8 to 10 hours for 16 to 20 lb and 10 to 12 hours for 20 to 24 lb.
  • "Wrap your turkey securely, making sure the water is not able to leak through the wrapping. Submerge your wrapped turkey in cold tap water. Change the water every 30 minutes. Cook the turkey immediately after it is thawed. Do not refreeze."
  • Microwave: the brochure says to check your owner's manual for the size of turkey that fits, the minutes per pound and the power level. It also says "Cook your turkey immediately. Do not refreeze or refrigerate your turkey after thawing in the microwave oven." I give no microwave times here.

How the start date is counted

  1. Divide the weight by 4 and round up to whole days. That is the slow end of the USDA rate, and it matches the top of every row in the brochure's table (3 days at 12 lb, 4 at 16, 5 at 20, 6 at 24). Using the slow end is my choice.
  2. Subtract those days from dinner day. A turkey that goes in on Saturday morning for a Thursday dinner has 5 days.
  3. The start date uses the slow end of the USDA rate, rounded up to whole days. If your turkey thaws at the fast end, it waits in the fridge for less than 2 days, within the 1 to 2 days the brochure gives for a thawed turkey.

The brochure gives no other thaw figures, so I add none. The cold-water times below are the backup if the fridge date has passed.

Fridge days use my 4 lb a day rounding, with the 5 lb a day figure next to it. Start dates are for dinner on Thursday, November 26, 2026.
